Directions:
Mix 4 cups of water, 1 can of fire roasted tomatoes (drained), 1 cup canned chicken or 2 cooked & shredded chicken breasts, and tortilla soup mix in a large saucepan.
Cook 15 minutes on medium heat or until all ingredients are cooked and heated through, stirring occasionally.
Top with grated cheese and crushed tortilla chips if desired.
Variations: Substitute ground beef for chicken. Add carrots, hominy and/or black beans.
