In the Pueblo home, Posole is the centerpiece of the New Year's celebration and of every Patron Saint's Day feast..and a time when Pueblo cooks prepare legendary quantities of this savory corn hominy, chile, herbs and spice stew to share with family and friends. Customarily eaten for good luck, we know you'll enjoy these great traditional flavors of the Southwest..as rich and distinct as the land and its people!

Cooking Directions:

Rinse Posole.
-
Bring water to a boil, add Posole, reduce heat and simmer for 3 hours or until Posole bursts, keeping water level above Osole at all times.

Add spice packet and cook an additional hour.
Serving Suggestions:

Great with hot cornbread or tortillas, honey and butter

If you desire, you can add a pound of cubed or ground pork when you add spice pack.
Ingredients:
Dried corn, dried green chili, red chili pepper, vegetable base, onion, sugar, celery, spices, garlic, black pepper.
