Crazy Charley Gumbo - Mild

Gumbo in a Jar? Crazy Charley is the first to do it. As far as we know, this is the only bottled Creole File Gumbo available. Packed in 16 oz Mason jars, it took over a year to get this recipe just right. You add your own meat or seafood and eat it over rice or use it as a fantastic soup. Once you start eating this dish, you just can't seem to stop. If you haven't tried this, you must. Serve with your favorite chicken, sausage or seafood.

Ingredients:
Chicken stock (water, onion powder, garlic powder, salt, paprika, dextrose, spice extratives), tomato paste, olive oil, okra, garlic, onions, celery, Tabasco Pepper Sauce, spices, file.
Additions:
Chicken broth, chicken, sausage or seafood
Directions:

Soup: add one cup chicken broth to gumbo, simmer 20 minutes

Chicken: precook and skin 1 lb chicken cut into 1/2" portions, add gumbo, simmer 20 minutes.

Sausage: cut your favorite sausage (we like andouille) into 1/4" rings - fry till brown. Add to gumbo and simmer 20 minutes.

Seafood: use shrimp, crab, scallops or white fish, add to gumbo. Allow gumbo to cook 20 minutes, then simmer 10 minutes.

Gumbo may be thinned with chicken stock or water.

Serve with or over white rice.
